Iron Skillet Chocolate Cobbler

IRON SKILLET CHOCOLATE COBBLER
Ingredients
Pudding
2 cups sugar
¼ to ½ cup cocoa
1 cup half and half
1 small can evaporated milk plus enough milk to make 1 cup
1 stick real salted sweet cream butter (not margarine)
1 teaspoon real vanilla extract
Crust
1 cup self-rising flour
1 cup sugar
1 cup milk
1 teaspoon real vanilla extract
Directions
Pre-heat oven to 350°
Melt butter in a 12” iron skillet. Add sugar, half and half and evaporated milk mixture, cocoa and vanilla extract. Using a wire whisk, heat and whisk mixture until sugar is melted and cocoa is thoroughly combined. Turn off heat.
Whisk together flour, sugar, milk and vanilla. Carefully pour evenly over the chocolate mixture.
Bake for 20-25 minutes or until there’s not much “jiggle” to the cobbler.
Serve warm with a huge scoop of vanilla ice cream.

Ham n Cheese Bites
Ingredients
3 cans seamless crescent rolls
2 cups minced ham
2 to 2 1/2 cups shredded cheese
Spaghetti or Pizza sauce
Directions: Roll out crescent rolls. Brush with sauce. Sprinkle on ham and cheese. Roll up lengthwise. Bake at 350 until golden brown. About 25/30 minutes.
Ham and Sweet Pickle Dip
Ingredients
2 cups minced ham
1/2 cup minced sweet pickles
Hand full of shredded cheese
About 1 to 1 1/2 cups miracle whip
1 to 2 tablespoons sweet pickle juice
Directions: Mix together and serve with crackers.
