If you love macaroni and you love tomatoes then you will delight when you put the two together!
Here is a simple, yet delicious, recipe for Mac & Tomatoes (my Grandmother’s recipe).
Ingredients:
3 quarts water
1 1/2 cups elbow macaroni
1 can (15 ounce) petite diced tomatoes
1 cup to 1 1/2 cups tomato juice
1/4 cup sugar, or more if you like
1/2 stick butter
Salt and pepper to taste
Bring water to a boil and add macaroni. Cook macaroni to al dente stage.
Drain and return to pan.
Add remaining ingredients and stir.
Simmer on low heat until butter is melted and liquid is somewhat reduced
Serve

My family loves this dish, been making it since I was 15, and am now 78. Got the recipe from my aunt, who worked at the Brown Hotel, and Canary Cottage in Louisville, KY, so this is certainly a southern dish. We add a couple of other ingredients but I don’t believe in rewriting your recipe… Just found your site today, will be joining, really like all I’ve read today… Thanks a Million
