Seven Layer Mexican Dip

The best thing about this recipe is that you can substitute ingredients or add more ingredients.  Try adding browned ground beef or sausage, or a small can of whole kernel corn.  Use your imagination and see what you come up with and what works best for you!

1 16 oz Sour Cream

1 package taco seasoning

2 cans seasoned black beans, drained

1 1/2 cups red onion or green onions (with some of the stems), chopped

1/2 cup cilantro, chopped

3 cups lettuce, chopped

3 cups fresh tomatoes, seeded and chopped

2 cups shredded cheese, fiesta blend

Directions

Whisk together sour cream and taco seasoning, set aside.  Pour black beans into a food processor and process until beans are a spreading consistency.  Spread beans into the bottom of a 10 inch pie pan or a 9×13 inch platter/baking dish.  Then spread sour cream mixture on top of beans.  Layer in following order, cilantro, cheese, lettuce, tomatoes and red or green onions on top.  Cover and chill until ready to serve.  Serve with tortilla chips.
