My Aunt Peggy grows some of the best asparagus! I impatiently wait to get my hands on her asparagus every spring!
There are lots of different ways to prepare asparagus, none of which you could go wrong with, but I think my favorite is roasted in the oven.
I really like roasted red potatoes too so I decided I would combine the two and it was delightful.
So here we go …..
Ingredients
4-5 medium red potatoes
1 lb fresh asparagus
4 tablespoons EVOO
4 tablespoons roasted potato seasoning

Directions
Preheat oven to 350°
Quarter red potatoes and place them in a gallon size ziploc bag
Add 2 tablespoons EVOO and 2 tablespoons of the roasted potato seasoning to the bag
Close and gently shake potatoes to coat
Pour potatoes into a baking dish and spread them evenly in the dish. Cove with foil.
Place in preheated oven and bake for about 45 minutes or until potatoes are just tender
In the meantime prepare asparagus
Trim bottoms of asparagus
Put asparagus in a ziploc bag. You can use the same one you used for the potatoes
Add 2 tablespoons EVOO and 2 tablespoons seasoning (sorry, no pic. I forgot:(
Gently shake the asparagus to coat.
When potatoes are ready, remove from the oven and spread asparagus on top of potatoes
Return to over, uncovered, and bake about 15-20 minutes longer or until asparagus is tender.
You want your asparagus to remain somewhat firm.
Remove from oven and serve immediately
