Yummy Mac and Cheese

Who doesn’t love mac and cheese?

And I don’t mean the kind from a box (yuck)!

I mean some old-fashioned, down home, southern mac and cheese.

Well, I can tell ya, me and my crew love the latter.

And here is my take on old-fashioned, down home, southern mac and cheese.

I took this to a potluck at church.

What a crowd pleaser it turned out to be!

Your gonna need about 1 and 1/2 to 2 cups macaroni

1/2 lb Velveeta cheese, cubed (I use a generic brand, Best Choice, that I get and IGA.  It’s much creamier than Velvetta)

8 ounces cream cheese, cubed

About a 1/2 cup milk

And about 4-6 tablespoons butter (not margarine)

I know, I’m as bad a Paula Deen, but hey the lady knows what’s she’s doing!  And it’s just not southern with the real taste of butter!

Cook and drain your macaroni

Place cubed cheese in a large bowl

DSCN2861Pour cooked macaroni over cheese

DSCN2863Then give it a little stir

DSCN2865Pour this mixture back into the pan you cooked your macaroni in and add the milk and butter

DSCN2866Simmer on medium-low heat, stirring frequently, until all cheese and butter has meltedDSCN2871

Pour into an oblong glass baking dish

Now your ready to serve to your family or cover and take to a potluck.

If you wanna make it real pretty you can sprinkle just a tad bit of paprika on top.  Not too much though, just enough to make it pretty.
