Mock Butterscotch Pie

I love, love, love Butterscotch Pie but it takes a while to get it made and then you have to wait for it thicken before you can eat it.  So, following is an accidental recipe that I just threw together one night.  Who knew it would be sooooo good and taste almost like the real thing!  It’s kinda like cold biscuit pudding, only gooder.  Try it and I hope you enjoy it.

Ingredients

3-4 leftover biscuits, no canned biscuits

1 small can evaporated milk

1 stick real butter

1 1/2 cups light brown sugar

1/2 cup heavy whipping cream

Directions

Heat oven to 350 degrees.  Crumble biscuits into a medium-sized baking dish.

In a sauce pan over medium high heat bring evaporated milk, butter, brown sugar and cream to a rolling boil, stirring constantly.  Reduce heat to medium and continue to boil for at least 1 minute.  Pour mixture evenly over biscuits.  You may need to let your biscuits “soak” for a few minutes.  Bake for 20 minutes or until bubbly.  To brown the top, custom broil for about 5 minutes or until it’s as brown as you want it.   Let cool for about 15 minutes.  Serve with a big ol’ scoop of vanilla ice cream, or by itself, either way it is delicious.
