Peach Cobbler

Looking out over the fields on our farm gives me a sense of peace and serenity.

As I sit on my front porch posting this recipe I can feel a very calming breeze sweep across my face every now and then.

Nothing but the sounds of crickets singing their favorite song and the tree frogs talking to each other breaks the silence.

And surprisingly, I even catch a glimpse of a lightening bug or two.

Wow!  What a beautiful, beautiful night the Lord has given us!

Sheer happiness!

Kinda makes me think of that song by The Nitty Gritty Dirt Band …..

Lazy yellow moon comin’ up tonight
Shinin’ through the trees
Crickets are singin’ and the lightnin’ bugs
Are floatin’ in the breeze
Baby, get ready

Well, you get the idea!!!

And now for the peach cobbler recipe I promised you!

Ingredients:

1 stick of butter (not margarine)

1 cup sugar

1 cup self-rising flour

1/2 cup milk

1/2 cup heavy whipping cream

1/8 teaspoon ginger

1/8 teaspoon nutmeg

1/8 teaspoon cinnamon

1 large can sliced peaches,

Heat oven to 350 degrees.

Slice butter into pieces and place evenly in the bottom of a 9×13 inch baking dish.

Pour peaches (with the juice) on top of butter

Whisk together sugar, flour, milk, cream, and spices.

Pour flour mixture evenly over top of peaches

Bake for about 45 to 50 minutes or until golden brown.

Serve warm with several big ole scoops of vanilla ice cream!  YUM, YUM!
