Summer has arrived, so grab your shades, rally your crew, and soak up the sunshine! Fire up the grill, whip up this salad, and prepare yourself for an avalanche of compliments that might just make you blush.
This salad is the ultimate summer sidekick for burgers, hot dogs, or barbecue. One clever viewer even suggested slapping it on top of a hot dog—now that’s a flavor explosion waiting to happen!

Ingredients
3 or 4 pickling cucumbers
3 or 4 cups cherry tomatoes
3 to 4 cups onion
1 to 2 tablespoons chopped fresh spinach
1 to 1 1/2 cups Italian Salad Dressing (we used Olive Garden Italian Dressing found on the shelf at Sam’s)

Slice those cucumbers into thin, bite-sized pieces—like tiny green coins of joy. Pickling cucumbers are my go-to because they’re light on seeds and heavy on looking fabulous.

Onions should be sliced so thin they could double as ninja vegetables, silently slipping into the mix without stealing the spotlight from the veggie ensemble.

Quarter the cherry tomatoes. I picked cherry tomatoes because they’re adorable and not overly seedy, which keeps your dish looking fabulous. However, feel free to use any tomato you fancy. Just remember, if your chosen tomato is a seed enthusiast, give it a good “de-seeding” before it joins the salad party.

Chop up the spinach and toss it into the dish—it’s more for show than flavor anyway. If you’re feeling adventurous, swap it out for basil to give things a little twist.

Drench it in Italian dressing! We went with Olive Garden Italian Dressing (snagged it at Sam’s Club), but feel free to grab your favorite kind. Sure, the flavor might take a tiny detour, but trust me, it’ll still be mouthwateringly amazing.

Once everything is mixed up, pop it in the fridge for about an hour to chill. After it’s nice and cold, grab a spoon, dive in …. you can thank us later!
