Mexican Cheese Dip

On the menu for lunch today at school was “Breakfast for Lunch” and I know I did not want breakfast for lunch.  So, I got to looking in my fridge for something I could throw together real quick in my crock pot, take to school and at be done by lunch time.  This is what I came up with and it was a huge hit. Simple, yet delicious!



16 ounces white cheddar cheese

16 ounces Velveeta cheese, cubed

1 lb mild sausage

2 cups fresh salsa (see Speedy Salsa recipe)


Brown and drain sausage.  Place cheeses, sausage and salsa in crock pot, give it a quick stir.  Simmer on low until cheese is melted stirring frequently.  Serve with tortilla chips.
